PRODUCTION DISCIPLINARY OF THE CONTROLLED DESIGNATION OF ORIGIN OF “SAN SEVERO” WINES

The controlled denomination of origin "San Severo" is reserved for wines that meet the conditions and requirements established by this production specification. These wines are as follows:

  • San Severo Bianco (also sparkling and sparkling)
  • San Severo Bombino bianco (also sparkling and sparkling)
  • San Severo white Malvasia di Candia
  • San Severo Falanghina
  • San Severo Trebbiano white
  • San Severo Rosso (also new and reserve)
  • San Severo Rosato (also sparkling)
  • San Severo Merlot (also rosé)
  • San Severo Uva di Troia o Nero di Troia (also rosé and reserve)
  • San Severo Sangiovese (also rosé)

The wines with controlled denomination of origin "San Severo" must be obtained from vineyards that have the following ampelographic composition within the company:

“WHITE "SAN SEVERO":
  • White bomb 40-60%
  • Trebbiano white 40-60%
  • Other white grape varieties, present within the company, suitable for cultivation for the province of Foggia jointly or separately, can contribute for a maximum of 15%.
"SAN SEVERO" WHITE BOMBINO:
  • Bombino minimum 85%.
  • Other white grape varieties, present within the company, suitable for cultivation for the province of Foggia jointly or separately, can contribute for a maximum of 15%.
"SAN SEVERO" WHITE MALVASIA OF CANDIA:
  • Malvasia bianca di Candia minimum 85%.
  • Other white grape varieties, present within the company, suitable for cultivation for the province of Foggia jointly or separately, can contribute for a maximum of 15%.
"SAN SEVERO" TREBBIANO WHITE:
  • Trebbiano bianco minimum 85%.
  • Other white grape varieties, present within the company, suitable for cultivation for the province of Foggia jointly or separately, can contribute up to a maximum of 15%.
"SAN SEVERO" FALANGHINA:
  • Falanghina minimum 85%.
  • Other white grape varieties, present within the company, suitable for cultivation for the province of Foggia jointly or separately, can contribute for a maximum of 15%..
"SAN SEVERO" RED AND ROSE:
  • Montepulciano minimum 70%
  • Sangiovese maximum 30%.
  • The grapes obtained from the vineyards of Uva di Troia, Merlot and Malvasia Nera and other black grape varieties, present within the company and suitable for cultivation for the province of Foggia, can also contribute up to a maximum of 15%.
"SAN SEVERO" MERLOT (ALSO ROSATO):
  • Minimum Merlot 85%.
  • Other black grape varieties, present in the company, suitable for cultivation for the province of Foggia jointly or separately, can contribute up to a maximum of 15%.
“SAN SEVERO” TROIA GRAPES (OR TROIA BLACK):
  • Trojan grape (or Nero di Troia) minimum 85%.
  • Other black grape varieties, present in the company, suitable for cultivation for the province of Foggia jointly or separately, can contribute up to a maximum of 15%.
"SAN SEVERO" SANGIOVESE:
  • Sangiovese minimum 85%.
  • Other black grape varieties, present in the company, suitable for cultivation for the province of Foggia jointly or separately, can contribute up to a maximum of 15%.

San Severo white, rosé and red wines must be produced in the production area in which the territory already delimited by D.M. March 29, 1932, published in the Official Gazette of April 8, 1932, no. 82, and includes the entire territories of the municipalities of San Severo (including the two fractions called Salsola and Vulganello of the municipality of San Severo falling within the territory of Foggia), Torremaggiore (including the hamlet of CastelnuovodellaDaunia, MasseriaMonachelle, included in the territory of Torremaggiore), San Paolo di Civitate and part of the territories of the municipalities of Apricena, Lucera, PoggioImperiale and Lesina

This area is delimited as follows:

starting from the far north in the countryside of Lesina (stronghold) follows the reclamation road no. 7 San severo- Torre Fortore until it joins the Provincial Ripalta-Lesina, enters the countryside of PoggioImperiale, follows the La fara canal going up to the Bologna - Otranto railway. It follows the route of said railway up to the locality of Coppafranceschiello, runs along the border of the countryside of Apricena, PoggioImperiale, deviating on the border of the countryside of San Paolo di Civitate-Apricena, skirting the reclamation road no. 7 San Severo- Torre fortore until junction of the Serracapriola - Apricena provincial road. It then runs along the said road to the town of Apricena, it joins the State Road 89 following it up to km 17.

It then diverts onto the S. Nicandro - Foggia natural cross-country ski track until it crosses the Apricena-San Marco in Lamis reclamation road, following it to the railway station, follows the Gargano railway San Severo - RodiGarganico for a stretch and detours alongside the border of the San Severo - Apricena countryside.

Then enter the countryside of RignanoGarganico following the pedegarganic reclamation road until the intersection of the Candelabro - Triolo streams. It goes up this last stream up to the intersection of the reclamation road n.23, until it crosses the Rignano - railway station, up to the border of the San Severo - Rignano countryside, follows the aforementioned borders continuing with those of Foggia and up to the intersection of the agri San severo- Lucera. It deviates on the border of the Lucera-Foggia countryside until it joins the reclamation road no. 11, follows it in the countryside of Lucera up to the Grotticella-petrilli localities, enters a track with a natural background up to the Salsola stream, runs alongside it until it crosses the reclamation road n.9, follows it up to the crossroads of the road of remediation n. 13 and follows it until it crosses the reclamation road n.5.

It follows this road until it crosses the borders of the Torremaggiore countryside. It runs along the borders of the countryside of Torremaggiore-Lucera-Castelnuovo-Casalvecchio-Serracapriola, up to the border of the countryside of San Paolo di Civitate.

From here it follows the border of the Serracapriola-Lesina countryside to the Coppadelle Rose locality, crosses the reclamation road n.33 in the countryside of Lesina and follows it to the hamlet of Ripalta.

Follows the Ripalta road - station up to the San Colombo district, follows a local road up to the Bologna-Otranto railway, follows it up to the Pontone canal, going up to the intersection with the reclamation road no. 7 San Severo- Torre Fortore.

The environmental and cultivation conditions of the vineyards destined for the production of "San Severo" wines must be the traditional ones of the area and, in any case, suitable for giving the grapes and derived wines the specific quality characteristics.

The planting layouts, training systems and pruning systems must be those that are generally used and in any case suitable for not changing the characteristics of the grapes and wines.

Any forcing practice is prohibited. However, emergency irrigation is permitted.

The vineyards planted after the entry into force of this specification, must have the following minimum quantities of vines per hectare: Tendone 1600 and 3000 for the other farming systems.

The grape yields per hectare for all types of wines with San Severo denomination of controlled origin, as per art. 1, are those specified below:

To these limits, even in exceptionally favorable years, the yields must be reported, provided that the production does not exceed the limits by 20%. If these limits are exceeded, all production will not be entitled to the San Severo controlled designation of origin
The maximum yield of the grape in finished wine, ready for consumption, must not exceed 70%. If it exceeds this limit, but not 75%, the surplus is not entitled to the denomination of controlled origin; more than 75% of the right to the controlled designation of origin for the entire product lapses;
The Puglia Region, after hearing the category organizations, with its own decree, year after year, before the harvest, taking into account the environmental and cultivation conditions, can establish a maximum production limit per hectare lower than that set by this specification, giving immediate communication to the Ministry of Agricultural, Food and Forestry Policies, - National Committee for the protection and enhancement of denominations of origin and typical geographical indications of wines.

The vinification, the processing of sparkling wines, the aging ones must be carried out within the entire territory of the municipalities including, in whole or in part, in the production area. The production of sparkling wines must take place within the entire territory of the province of Foggia. The grapes destined for winemaking must guarantee the following minimum total natural alcoholic strength by volume to the wines of San Severo denomination of controlled origin:

The release for consumption of the wine with controlled denomination of origin San Severo Rosso Riserva and San Severo Rosso Riserva with the grape variety specification cannot take place before 18 months starting from 1 December of the year of grape harvest. In winemaking only loyal and constant oenological practices are allowed, capable of giving the wines their peculiar characteristics. For all types of San Severo wines, correction with concentrated musts produced from grapes of the production area, with rectified concentrated musts and with self-enrichment is allowed. For all types of wines with San Severo denomination of controlled origin, sweetening is allowed according to EU and national standards.

The wines with the denomination of controlled origin "San Severo", when released for consumption, must meet the following characteristics:

In relation to possible storage in wooden containers, the flavor of the wines may reveal a slight hint of wood. The Ministry of Agricultural, Food and Forestry Policies - the National Committee for the protection and enhancement of designations of origin and geographical indications typical of wines - has the faculty to modify the limits of total acidity and the minimum non-reducing extract by its own decree.

 

The addition of any qualification not expressly provided for in this production specification is prohibited to the San Severo controlled designation of origin. On the bottles containing San Severo wine, the year of production of the grapes may appear. This indication is always mandatory for the wine designated with the mention Riserva.

For San Severo white and San Severo wines, the use of alternative containers to glass consisting of a bottle of polyethylene and polyester multilayer plastic material enclosed in a cardboard or other rigid material with a capacity of not less than 2 liters is allowed.

For the release for consumption of wine, San SeveroRiserva, only glass containers with a capacity of up to 3 liters are allowed.
