Castrum – Rosso – San Severo DOP

“Castrum” was the town with medieval fortifications, what was originally San Severo. Our Castrum is the oenological metaphor of San Severo DOP as the origin of our passion. Sourced from Montepulciano and Sangiovese grapes. This ruby red wine is extracted from red grapes typical of the San Severo countryside included in DOP.

VINIFICATION
After careful selection of the grapes during the harvest, the berries macerate finely at a controlled temperature: the wine obtained matures in steel silos for about 8 months and is refined in the bottle for about 3 months.

TASTING NOTES
Color: ruby red.
Scent: Fruity notes stand out on the nose, small black and red berries, plums and black cherry, spicy with floral notes especially of violet and cyclamen.
Taste: rightly tannic, full and velvety.

PAIRING
It is elegantly combined with meat dishes, roast meats, braised meats and game.The combination with lasagna and fresh pasta with tomato saucesisexcellent.
