Castrum – Bianco – San Severo Dop

“Castrum” was the town with medieval fortifications, what was originally San Severo. Our Castrum is the oenological metaphor of San Severo DOP as the origin of our passion. This wine with a fresh and dry acidulous taste with a vinous and delicate aroma is extracted from grapes of DOP San SeveroBombino, Trebbiano and Malvasia varieties. It is ideal with appetizers, light dishes or fish dishes.

VINIFICATION
It takes place with selected grapes underway to fermentation of the must obtained by gently pressing them and taking care to limit the contact with the air to avoid oxidative phenomena. The steel tanks kept at low temperatures host the fermenting must which releases all its scents.

TASTING NOTES:
Color: Yellowish with soft greenish hues Bouquet: Floral aromas ranging
from white flowers to yellow flowers Taste: fresh, medium-bodied, fairly persistent dry taste.

PAIRING
First courses. It is the perfect wine to accompany vegetable and fish risottos. It pairs well with flans andsavoury first courses. Second courses with cooked seafood or white meat.
